Yum

I did it. I got sucked into the world of ebelskivers. My first attempt was pretty good, the kids gave them two thumbs up.

I might try mixing it up and putting some filling in them, I suspect that we're classic and will like them mostly plain. I didn't have many options for toppings, the butterjam was so so with my critics. Any suggestions?

We like bacon bits (not the fake stuff), mini chocolate chips, steamed blueberries (microwave for 30 seconds), raspberries, and blackberries. Strawberries were wierd, wrong texture.

I like topping ours with powdered sugar and a mixture of butter, more powdered sugar and a jam of choice (lingonberry is the original, but I have used both blackberry and boysenberry).

Grandma tried stuffing them with apples once, but it didn't work. She thought that apple pie filling might work better because of the softened apples.


And, YEAH you got a pan! They look fabulous!

I have no experience with aeblskivers - I've only had them once - at your house. For what it's worth, you could try filling them with lemon curd. If your family likes lemon curd.
